Fresh madeleines are one the easiest ways to make someone happy. I’ve tried many recipes and this is my current favorite.
Someone once asked on a forum ‘How can you best store baked madeleines?’. My favourite answer was: one does not store madeleines, you eat them directly out of the tin like an animal.
Ingredients
250 | gr | butter |
30 | gr | honey |
4 | eggs | |
150 | gr | powered/icing sugar |
125 | gr | all purpose flour |
125 | gr | almond flour |
1 | zest of whole lemon | |
1 | gr | salt |
8 | gr | baking powder |
Method
Make a beurre noisette with all the butter. Add the honey and let it cool down.
Mix the eggs and the icing sugar. Then add the remaining ingredients and mix into a batter.
Add the cooled down butter mixture and mix until homogeneous.
Now, I prefer to store the batter in a piping bag in the fridge. That way you can always make a batch of madeleines when you need some.
Bake at 200 degrees celcius in a madeleine tin (time varies with the size of madeleines).
Some recipes call for 220 degrees celcius for 3 minutes, then turning the oven off for 8 minutes and then another 3 minutes on 160 degrees celcius.
