Spice Mixes

For these spice mixes, some of the ingredients are still whole. I normally use a small spice blender or a coffee grinder to pulverize and mix the ingredients. Some people would swear to use a pestle and mortar, but usually there is no patience in my vicinity. Let’s eat.

I usually swear when I read a recipe using volume instead of weight, but for spice mixes I make an exception ;)


Curry

4 tbsp Tumeric
4 tbsp Coriander seeds/powder
4 tbsp Ginger powder
1 tbsp Cayenne pepper
4 tsp Black pepper
1 tsp Ground cumin
1 tsp Ground cardamom
1 tsp Ground cloves
1 tsp Ground yellow mustard

Shoarma

8 tsp Smoked paprika
4 tsp Coriander seeds
4 tsp Cumin seeds
4 tsp Garlic powder
2 tsp Salt
2 tsp Cinnamon
2 tsp Tumeric
1 tsp Cayenne pepper

Chili

4 tbsp Chili powder
1 tbsp Ground cumin
1 tbsp Salt
2 tsp Black pepper
1 tsp Cayenne pepper
1 tsp Garlic powder
1 tsp Onion powder

Sweet BBQ rub

4 Dried guajillo peppers (or any other)
1 tbsp Dark brown sugar
1 tbsp Smoked paprika
1 tbsp Black pepper
1 tbsp Garlic powder
1 tbsp Onion powder
1 tbsp Ground yellow mustard
1 tbsp Salt

Bake the peppers in a dry pan on medium heat to maximize their flavour

KFC mix

4 tbsp Paprika
3 tbsp White pepper
2 tbsp Garlic salt
1 tbsp Ground ginger
1 tbsp Dried mustard
1 tbsp Black pepper
1 tbsp Celery salt
2 tsp Salt
2 tsp Basil
1 tsp Oregano
1 tsp Thyme

Mix with 2 cups white flour to make a coating for chicken

Garlic salt

4 tbsp Salt
4 tsp Garlic powder
1 tsp Onion powder
